
ANN ARBOR, MI -- Peridot recently opened in downtown Ann Arbor as a spot for Vietnamese-inspired food and craft cocktails.
The restaurant opened in early October with help from members of the Watershed Hospitality Group and Pacific Rim’s Owner and Chef Duc Tang.

Adam Lowenstein, partner of Watershed Hospitality Group, said Peridot took years of planning and has been pretty successful since opening in Ann Arbor.
“It’s been really busy and really well received,” he said. “People are super happy with the food, the drinks and the atmosphere.”
Peridot features shareable dishes heavily inspired by flavors from Vietnamese cuisine. The menu is a collaboration of ideas from Tang and Chef Brady Kelley.

Peridot strikes the balance of being a bar and restaurant and is a spot people can come to despite the experience they are looking for, Kelley said.
“If you come in here and want more of like a bar experience, you can absolutely have that. Or if you want to have a sit-down dinner with really nice plated food, you can also have that experience as well,” he said.
Current menu items include pork spareribs, summer rolls and banh mi bruschetta.
Peridot’s menu is divided into two categories -- small plates and large plates. The restaurant’s small plates give customers more shareable dishes to try.
Peridot’s crab fried rice is its top seller and is made with chili-garlic sauce, crabmeat, scallions, egg and puffed rice, Lowenstein said
Peridot’s fried chicken wings made using caramelized fish sauce glaze and pickled Fresno chilis are also popular.
“Multiple people have told me they’re the best wings that they’ve ever had,” Lowenstein said.
Lowenstein’s favorites include the green papaya salad, made with English cucumber, pickled daikon, roasted peanuts, fried shallots, spicy lime dressing and house-made beef jerky.
This dish “can often be spicy,” Lowenstein said, but Peridot’s version has “more of a savory flavor.”
“(The dish is) real fresh, bright and is a complement to some of the other items,” he said.
Popular Peridot cocktails include The Nod made with gin and other ingredients like habanero and cucumber.
Peridot hopes to become a go-to late-night spot and will even feature a different menu from 10 p.m. to midnight every night the business is open, Kelley said.
This late-night menu brings out more of a “bar vibe,” Kelley said, adding some of the items people can find during the day will still be offered during that time, along with some exclusive menu items.
Peridot, 118 W. Liberty St., is open 5 p.m. to midnight Tuesday through Thursday and 5 p.m. to 2 a.m. Friday through Saturday. The kitchen is open until midnight every night the business is open.
