Dig in to fruity, fresh Summer Bowl Cake - Scranton Times-Tribune

As friends and family get together this Independence Day, Local Flavor went on a mission for the ultimate menu items for today and the rest of cookout season. And nothing tops off a backyard barbecue quite like a summery dessert.

Say hello to Margie Kohl’s Summer Bowl Cake, made with pound cake, vanilla pudding and whipped topping in between layers of pineapple, strawberries and bananas.

The Dickson City resident and her daughter-in-law, Cara, came across the recipe in a cookbook. The two often cook and bake together, trying out different recipes.

“We’re a good team in the kitchen,” Kohl said. “You can usually find us there.”

Once they saw the family’s reaction to Summer Bowl Cake, they knew they had a hit. Kohl also divulged that one of her two sons, Jer and J.P., loves it so much that he once ate it with a soup ladle.

“I won’t say which one, but that’s all you need to know,” she quipped on a recent night at the home she shares with her husband of 36 years, Fred. “Seriously though, everyone loves this cake, and the best part is that it’s so easy.”

The dessert earned Kohl a $50 gift card to Riccardo’s Market, 1219 Wheeler Ave., Dunmore.

It is not only simple to make but also quick to whip up and take to a party or get together, she said. While bakers can use either angel food cake or pound cake, Kohl prefers the latter. She and her daughter-in-law also agreed that bakers can swap in different fruits, including blueberries, to make the dessert more festive.

“You can use whatever’s in season and it will still taste just as good,” she said. “It’s the perfect summer dessert.”

Kohl considers cooking her therapy and loves to unwind by creating new dishes and trying different meals. Her family’s favorites include her Veggie Pizza, any of her homemade soups and her coveted Sausage and Peppers. She goes all out for the holidays, too, making a Thanksgiving meal with all the fixings that both her husband and daughter-in-law joked could feed up to 30 people. Also, along with her daughter-in-law, Kohl handmakes Polish delicacies such as pierogis for the family’s Wigilia, a traditional Polish Christmas Eve dinner. The pierogi recipe is just one she carries on from her mom, Margaret Coveleski Saslo. It’s fitting, too, as Kohl said her 95-year-old mother has always been her culinary inspiration.

“That’s just how I grew up, watching her. You make a meal for your family,” she said. “I still cook five days a week. It’s not a chore to me. It’s relaxing and my ‘me’ time.”

Cooking remains a passion for Kohl, but her most favorite thing is being a nana. Her grandchildren, Jackson Gabriel, 4, and Cecelia Marie, 1, are her “pride and joy,” she said. There’s nothing she loves more than spending time with them and seeing the world through their eyes. Kohl is ready for the day they join her in the kitchen with their mom.

“It doesn’t get any better than this,” she said.
