Islands Restaurants, the 39-year-old Carlsbad chain known for its Hawaiian-inspired burgers and skin-on French fries, is rolling out a new menu it calls “Clean and Customized.”
The new menu makes the fries an optional side dish that diners can now customize with different seasonings and toppings, including the new Ghost Pepper Fries and Truffle Fries. But the bigger change at Islands that will be gradually introduced over the next year is a commitment to serving only hormone- and antibiotic-free proteins and no artificial ingredients or preservatives.
Company president Michael Smith said that with guests increasingly interested in eating healthier foods, the company decided to use its downtime during the pandemic to map out plans for the “100% clean” menu at its 44 restaurants.

Vistal dish has a mission
In honor of Asian American & Pacific Islander (AAPI) Heritage Month in May, Vistal Restaurant at the Intercontinental San Diego hotel is serving a special dish to raise awareness.
Kampachi Crudo, created by Chef Kevin Tien of the Moon Rabbit at the InterContinental Washington, D.C., is being served at seven of the chain’s hotel properties nationwide through May 31. Sales from the dish will benefit the Stop AAPI Hate campaign (stopaapihate.org). The dish features six sashimi slices of Hawaiian kampachi fish atop cara cara oranges, with Vietnamese dipping sauce, citrus oil, cilantro and yuzu tobiko. Vistal is at 901 Bayfront Court, San Diego. Sky Deck opening delayed
Sky Deck, the upscale food hall on the second floor of the Del Mar Highlands Town Center, will have a gradual rollout of its restaurant tenants this summer rather than a grand opening this month.
The hall was originally scheduled to open May 27, but due to construction delays, tenants will be opening as they finish construction in their individual booth areas. The first tenant, Ziziki’s Street Food, opened in March as a takeout-only business. Ambrogio15 gourmet pizzeria and wine bar will likely open at the end of May. And on June 15, the Boochcraft Taproom and several other tenants will hold grand openings. Some tenants may not open until July.
