Italian restaurant battles patrons demanding cream sauce on their carbonara: 'We are not willing to compromise' - New York Post

Basta!

One Italian restaurant has had it with clueless customers disrespecting their classic, Roman-style pasta carbonara — now, they’re going public with their war on the disinformation-blinded diners who won’t stop asking for cream sauce.

Bottega Prelibato, a trendy London eatery, found themselves overwhelmed with special requests to rewrite the traditional recipe — which calls only for egg yolks, cubes of guanciale, shavings of Pecorino cheese and fresh-cracked black pepper — leading to a highly-visible social media dustup that’s been dubbed “Carbonara gate.”

“We are proud of our recipe… without any cream or other additives,” the restaurant, owned by actual Roman Gianfillippo Mattioli, fumed on the house Instagram account recently.

“However, we also understand that not everyone shares our taste for this classic dish. Some of you have asked us to add cream, mushrooms, chicken, or other ingredients to our carbonara.”

After stating firmly that they would not be caving into these demands — unreasonable asks likely to have upset any well-educated Italian cook — the restaurant went on to announce that it would be removing the dish from the menu entirely, The Mirror reported.

“Good decision? Bad decision? We don’t know. You can tell us in the comments. ⁣However, one thing we do know, is that we respect your preferences, but we are not willing to compromise on our quality and authenticity.”

“I am from Rome and I actually know how to do it, and my chef does as well,” Mattioli later told The Telegraph. “We don’t use cream, we pre-cook the Italian Guanciale and we make it crispy.”

“It’s very controversial.” Mattioli admitted. “It’s actually very complicated and difficult to satisfy people.”

Diners — and internet foodies — had a range of reactions to the pasta punchout.

“Serve it without apology. That’s ridiculous. I make my carbonara exactly the same way and it’s the only way I’ll ever make it,” one supporter said.

“Well done, La Carbonara is only served one way, the ITALIAN way,” another chimed in.

“If they want cream/mushroom/chicken etc etc there are plenty of fake “Italian” chefs willing to cook that hunk of junk,” one more wrote.

This isn’t the first carbonara controversy of late — food writers for the New York Times angered the internet earlier this year by promoting a recipe calling for tomatoes.

“Y’all just declared war on Italy,” one X user joked at the time.
