Tsukemen back on the menu at Ramen Tatsu-Ya in Austin area - mySA

In December, fans of Ramen Tatsu-Ya, the popular ramen joint with locations across Central Texas, were dismayed. For months, they had walked into their nearest ramen shop, geared up to order their favorite dish, and were told it wasn't available.

When MySA reached out to Ramen Tatsu-Ya late last year, a representative for the restaurant confirmed that tsukemen — cold noodles served in a bowl, meant to be dipped into hot broth — had been taken off the menu in November 2022, but that it was coming back in early 2023.

"The dish was quite popular and some guests have been sad to see it go, but we are confident this new iteration will be even more delicious than its predecessor," Ramen Tatsu-Ya told MySA.

On Monday, May 8, after long last, that new iteration will available at all Ramen Tatsu-Ya and at BBQ Ramen Tatsu-Ya — with some upgrades.

The new tsukemen is composed of condensed bone broth, cooked for more than 80 hours, with yuzu zest, chashu pork, menma, blanched scallions, and toasted bonito mayu. Ramen Tatsu-Ya says that returning ingredients like ajitama egg, lime wedge, and nori will top the new version of the noodles.

BBQ Ramen Tatsu-Ya is also getting its very own unique tsukemen, a pork and beef dipping broth, brisket, pickled jalapeño, menma, charred scallions, chili oil, lime, and ajitama. For an additional $2.50, diners can add Frito Pie Kaedama, which will transform the broth into a Frito pie when the noodles are finished.

The restaurant said it took months perfecting the new dishes, for which they have only one instruction: "Remember to dip, not dump!"
