HASTINGS, Neb. (KSNB) - If you’re looking for a new, easy to make and healthy side dish to make for your family for Thanksgiving. Try making Maple Roasted Sweet Potatoes.
Shannon Frink, a dietitian with Mary Lanning Healthcare, shows how to make this delicious dish for your Wellness Wednesday.
Ingredients:
- 2 ½ pounds sweet potatoes, peeled and cut in to 1 1/2-inch pieces (about 8 cups)
- 1/3 c. pure maple syrup
- 2 T. spreadable butter
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1/8 tsp ground ginger
- Optional: ½ cup pecans
Instructions:
- Preheat oven to 400°F.
- Arrange sweet potatoes in an even layer in a 9x13-inch baking dish. Combine maple syrup, butter, lemon juice, cinnamon, nutmeg, and ginger in a small bowl. Pour mixture over sweet potatoes; toss to coat.
- Cover and bake the sweet potatoes for 15 minutes. Uncover, stir and cook, stirring every 15 minutes, until tender and starting to brown, 45 to 50 minutes more. Toss with pecans with about 15 minutes left to bake.
