HONG KONG (AP) — Tighter COVID-19 restrictions, including a ban on dining in restaurants after 6 p.m., mean many Hong Kong families are eating their reunion dinner on Lunar New Year’s eve at home this year.

The traditional dish known as “poon choi," or “basin food,” is a large dish filled with lotus root, radish, taro and more expensive delicacies such as prawns, abalones and meat layered on top. Each food is symbolic and enjoying the dish with family is a way of sharing hope for a good year.

To make up for lost business from the dining-in restrictions, many restaurants are offering “poon choi” takeaways. Each ingredient is prepared and cooked separately in advance, usually in the early hours of the day before the dish is assembled for customers to take home.

RenRen Heping Restaurant chef Fong Wah-yat has been busy preparing takeaway “poon choi” for two weeks, with the restaurant receiving some 425 orders for the dish.

“Chinese people like to eat these expensive foods like sea cucumbers and abalones at our Lunar New Year family gatherings because we have worked very hard over the past year,” Fong said. “We should eat these delicacies to reward ourselves for our hard work.”

Each ingredient in the dish carries meaning. Fish maw represents a constant flow of fortune, while abalone — with its shape reminiscent of gold ingots — represents abundance, according to Fong.

“All the things that Chinese people eat during Lunar New Year bring good luck, and we hope it will bring us a good year ahead after eating them,” he said.

Hong Kong’s tightened restrictions means restaurants that depend heavily on the festive season have seen their revenue dip.

“Banning dine-in after 6 p.m. actually hugely affects the business of both Chinese and Western restaurants because the income generated from dinner accounts for a great percentage of a restaurant’s total revenue,” said Mansfield Hui, owner of RenRen Heping Restaurant.

While ordinary takeaway meals cannot offset the losses much, more expensive dishes like “poon choi” help, he said.

For some customers, takeaway “poon choi” is a good alternative while the omicron variant is surging in the city.

“If you eat in a restaurant, there will be many people and during the pandemic, I do not want to eat in a restaurant with so many people,” said Ng Wai-kuen, a customer who bought takeaway “poon choi” for six people and was planning a dinner at home.

Jim Dixon wrote about food for WW for more than 20 years, but these days most of his time is spent at his olive oil-focused specialty food business, Wellspent Market. Jim’s always loved to eat, and he encourages his customers to cook by sending them recipes every week through his newsletter. We’re happy to have him back creating some special dishes just for WW readers.

I sold olive oil at the Portland Farmers Market for more than 15 years, and most of the time my booth was next to Fred Carlo’s. Portland’s original master of Italian-style meat products, Fred still grills his custom sausages and makes sandwiches with onions and peppers at his market stand. I would inhale the savory aroma of frying onions, peppers, and pork from his grill while we’d “sweeten” our coffee from a flask and swap stories about the things we loved to eat.

He told me his favorite dish was made by his grandmother. She’d cook a pot of beans, then add Savoy cabbage and polenta and let it all simmer together to form a thick, chunky stew. It’s the same approach used to make what the Tuscans call polentina, a vegetable stew thickened with a little polenta, or jota from the Veneto, a hearty polenta-thickened soup made with smoked pork, beans, and sauerkraut.

But it’s really just comfort food, soft and spoonable and best eaten from a big bowl with a shower of grated Parmigiano, a healthy drizzle of good olive oil, and freshly ground black pepper. Or serve it alongside a grilled Italian sausage.

1 cup borlotti, cranberry, or pinto beans

2 cloves garlic, chopped

6-8 leaves fresh sage, chopped

3 tablespoons extra virgin olive oil

6 cups water

2 teaspoons kosher salt

¼ head Savoy cabbage, chopped

¼ cup polenta

More extra virgin olive oil, grated Parmigiano-Reggiano cheese, and black pepper to finish

Combine the beans, garlic, sage, olive oil, water, and salt in a 4-6 quart saucepan, bring it to a boil, reduce the heat to a gentle simmer, cover, and cook until the beans are tender, 90 minutes to 2 hours.

Chop the cabbage into roughly 1-inch pieces and add to the beans. Stir in the polenta, cover and cook for about 1 minute.

Remove the lid and stir with a wooden spoon, scraping the bottom of the pan to loosen any stuck polenta (this technique works for cooking grits, plan polenta, oatmeal or any other grains that tend to stick; you can also add more hot water, about ¼ cup at a time, while stirring). Let the pot simmer gently, stirring and scraping every 10-15 minutes, for 45 minutes.

Taste and add salt if needed. Serve hot with a drizzle of olive oil, freshly grated Parmigiano, and cracked black pepper.

The Dish: Rams Were Ready for the Moment - CSURams.com

FORT COLLINS, Colo. – Coaches love their sayings, but the timing has to be right on which one to use in a given moment.
 
Niko Medved had one ready for Tuesday night at Moby Arena, with his team struggling early against Nevada, especially on the defensive end. Not only that, the bench was short, with Adam Thistlewood and John Tonje out. More was going to be expected of some others.
 
James Moors knew as much, but his readiness became even more key when Dischon Thomas was in foul trouble early in the second half.
 
"A lot of these guys stayed ready. I told them after the game there's an old saying, when opportunity comes, it's too late to prepare," Medved said. "A guy like James Moors, who started last year for us and hasn't played as many minutes, but the fact that he has such a great attitude and stays prepared … We don't win the game without his defense. His defense was phenomenal, guarding the ball screen, physicality. Dischon was in foul trouble and he stepped up big time."
 
Moors helped the Rams shut down the paint, especially in the second half as the Rams went on a 12-0 run late to pull away for a 77-66 victory which pushes the team to 16-1 – the best start for the program – and 6-1 in Mountain West play.
 
In a 40 minute game, rarely will a team play all of them pretty.
 
Colorado State's men's basketball team certainly didn't in the contest. Some of them were lackluster, especially those in the beginning, and Medved told his team as much. The Rams were down seven to Nevada at the break, with the Wolf Pack getting some way-too-easy points in the paint.
 
Nevada is a team which can score. And they did, spending most of the evening shooting better than 50 percent. Grant Sherfield was good, scoring 16. Desmond Cambridge Jr. was pretty good, too, scoring 23. Most of the night, they kept hitting the tough shots, the big shots to stop a CSU surge or create one of their own.
 
Even with Colorado State was struggling – shooting just a shade beyond 30 percent the first 20 minutes – they filled much of the game with gritty minutes. The Wolf Pack led by 10 in the final minute of the first half, but the Rams never allowed them to run away.
 
Then came the surge to start the second half. The energy was back, and soon the game was tied.
 
With 6:03 remaining, the game was knotted at 63. But for the next 5:11, the Wolf Pack never came off that number. Moors played in tandem with Thomas down the stretch, with Moors handling the bulk of the defensive chores.
 
"I just had to be really locked in on my scout, knowing (Will Baker) will go left, get the post blitz ready and be on the ball screens," Moors said. "That's all I was focusing on, getting one stop at a time."
 
Runs don't happen without work on the defensive end. Moors is great at that in practice every day, and he was particularly needed in the second half, especially with the way Nevada plays.
 
Offensively, they like to work off ball screens, and Moors does a great job of shutting them down. He was ready, and Medved counted on as much.
 
"James is a terrific defensive player," Medved said. "He's really good that way, and he's really good defending ball screens, and this is a team that sets a lot of ball screens. He does a great job with that and plays with a lot of physicality."
 
He gave his team some points, too, eight to be precise and grabbed four rebounds. He did it all in a season-best 26 minutes, just shy of his court time the past three games combined.
 
Kendle Moore, who has struggled offensively this year, gave the Rams nine points (for the second consecutive game) and his normally strong defense, particularly on Sherfield, who was 6-of-15 from the floor and just 2-of-7 from deep, held below his season average.
 
Again, David Roddy was good with 18 points and eight rebounds, and his six assists were better than the combined total of the two point guards on the floor. Isiah Stevens started slow, but hit a hot streak and finished with 16. But Roddy knows the really good stuff is the performances that Moors, Moore and even Isaiah Rivera delivered on the night.
 
"It's awesome," he said. "The guys building up confidence, James stepping up huge on the defensive end, as well as making winning plays like he always does. Again, it could be anybody's night. We just all had to be ready and be mentally and emotionally tough."
 
Medved knows it's hard, especially for young players, to be ready when the moment calls. It requires believe and persistence, and those can sometimes be found in short supply on the bench. It's too late to play catch up when called upon.
 
He tells his team to be a star in their role, whatever that may be, and some nights will require more. Could be more minutes, defensive effort or even scoring.
 
For Medved, the timing was perfect to remind his team as much. Better because they actually were, and because they were, the win was one he considers one of their most impressive to date.

Dish Network added an autonomous test tool to its network software portfolio to ensure reliable performance of a forthcoming 5G network.

The network test platform from Verica uses an approach called chaos engineering to simulate potential problems and learn how to fix them.

Dish Network staed it is using the Verica platform for open-source system Kubernetes, which automates deployment of containerised applications, and Kafka, used to stream data and events.

The operator claimed Verica will help its engineers address potential network outages by making changes before problems occur.

Verica will also enable Dish Network engineers to understand the limitations of network software, the operator stated.

Dish Wireless EVP and chief network officer Marc Rouanne stated the Verica platform will help it understand how conditions at the network edge impact performance and reliability. This is particularly important because the operator is counting on edge-based enterprise deployments as a differentiator for its 5G network.

It was the latest retransmission fee impasse to surface in recent years. Now, it has ended. But, there’s chatter that another carriage dispute has just been resolved, hours before a “blackout” by law was to take place.

Dish Network is required by the US government to cover 20% of the US population with 5G by June 14, 2022. And, according to a number of indications, the company is well on its way toward meeting that goal.

However, if Dish successfully reaches that FCC-mandated 5G buildout target, will it continue expanding its network throughout 2022 and 2023?

At least one analyst firm believes the answer is a tentative "yes."

"We believe Dish is showing early indications that it will continue to be active working on phase II of its build in 2022," wrote the financial analysts at Cowen in a recent note to investors. And that's important, according to the analysts, because it could ultimately expand Dish's 5G network from around 15,000 cell sites to more than 40,000 cell sites.

Deadlines and more deadlines

Dish's 5G efforts stem from the company's 2019 agreement with T-Mobile and the US Department of Justice. That agreement, which positioned Dish to become the nation's fourth nationwide 5G provider, included a number of specific 5G coverage goals.

However, the FCC in 2020 issued an order that modified and extended Dish's spectrum buildout deadlines. The company still must cover 20% of the US population by June 14, 2022, using most of its spectrum licenses, but if it reaches 50% coverage by June 14, 2023, then some of its broader coverage goals can be pushed out by a few years.

If Dish fails to meet its coverage goals – including the new ones issued in 2020 – it could lose its spectrum licenses and pay up to $2.2 billion in penalties.

To be clear, none of Dish's recent spectrum purchases – including the $7.3 billion it spent on spectrum licenses between 3.45GHz and 3.55GHz – are included in those FCC-mandated buildout goals.

Spending and more spending

Dish spent $281 million on its open RAN 5G network buildout during its recent third quarter. The company expects to increase that spending through the first quarter of 2022. Thereafter, Dish network chief Dave Mayo expects the company's capital expenses to reach a "steady state" and flatten out until 2023.

Already the financial analysts at Raymond James estimate that Dish has installed its 5G radios atop around 1,000 cell towers across the country via agreements with the likes of Crown Castle, American Tower and other cell tower owners. At least 100 of those towers are located in Las Vegas, according to estimates, though Dish missed its initial goal of launching commercial 5G services in that city by the end of last year.

The analysts from Cowen estimate Dish will need to install radios on top of around 15,000 cell towers to cover 20% of the population. To cover the entire country, it likely would need around 40,000 cell sites. To put that into perspective, the analysts from Raymond James estimate Verizon has around 68,000 cell sites and AT&T has around 70,000 cell sites. T-Mobile expects to complete its network buildout program with around 85,000 cell sites.

And Dish's interest in adding more cell sites is clear. Indeed, Dish founder Charlie Ergen is scheduled to speak at the upcoming NATE Unite 2022 trade show in February in Las Vegas. The annual event is specifically intended for cell tower technicians, the engineers who physically install equipment on top of towers.

"NATE Unite 2022 being held in Las Vegas is well-timed to coincide with Dish preparing to activate service and make the city its first official 5G wireless market during the first quarter of 2022," NATE CEO Todd Schlekeway said in a statement.

DISH Network sued over fees in 401(k) plan - Pensions & Investments

Four former employees of DISH Network Corp. have hit their ex-employer with a class-action lawsuit claiming the satellite television company's $841 million 401(k) plan charged participants overly expensive fees.

The lawsuit filed Jan. 20 in a District Court in Colorado Springs, Colo., alleges that the company breached its fiduciary duties by failing to disclose the expenses and risk of the plan's investment options to participants, allowing unreasonable expenses to be charged to participants, and selecting and retaining high-cost and poorly preforming investments.

The plaintiffs filed the suit against the company, the company's board of directors, the retirement plan committee, and other fiduciaries of the plan.

The lawsuit took the satellite TV company to task for alleged excessive record-keeping and administrative fees charged by Fidelity Investments, claiming there were other comparable plans paying much lower fees. Fidelity is not a defendant in the suit.

"The fees paid by the plan for virtually the same package of services are much higher than those of plans with comparable, and in many cases smaller, participant counts," the lawsuit claimed.

The plaintiffs also faulted the company for choosing Fidelity's active suite of Freedom target-date funds over less costly and less risky Freedom index funds as the plan's qualified default investment alternative.

"Defendants failed to compare the active and index suites as well as all other available target-date funds and consider their respective merits and features," the lawsuit alleged.

Among other things, the plaintiffs are seeking equitable, legal or remedial relief for all losses and compensatory damages they sustained.

DISH Network officials did not respond to an email seeking comment.

SpaceX Seeks to Deploy 'Ruggedized' Starlink Satellite Dish for Buildings - PCMag

The Starlink dish from SpaceX is already built to survive both freezing and sweltering conditions. But now the company is requesting FCC approval for a new "high-performance" Starlink dish for buildings that promises to withstand even bigger temperature swings. 

On Friday, SpaceX filed an application for the "HP" model Starlink dish, which it says is built with "features that ruggedize the unit for use in harsh environments."

“Granting this application would serve the public interest by authorizing a new class of ground-based component for SpaceX’s satellite system that will enhance the range of broadband capabilities available throughout the United States —and most particularly, to those in challenging environments where ruggedization is appropriate,” the company added. 

In August, SpaceX filed a similar application for a ruggedized Starlink dish capable of deliving high-speed internet in extreme environments. However, the application—which is still awaiting FCC approval—only requested operating the dishes on moving vehicles, such as planes, boats and cars. Friday’s application, on the other hand, requests approval to operate the ruggedized Starlink dishes as “fixed Earth stations,” meaning they’d be installed outside a building as stationary equipment.

For perspective, the current Starlink dishes for consumers can operate in temperatures from -22 degrees Fahrenheit to +122 degrees Fahrenheit. The equipment can also melt any snow that falls on the dish.  

The upcoming high-performance dish promises to take the climate durability to the next level. “Compare to other user terminals SpaceX Services has been authorized to deploy, the HP model has been ruggedized to handle harsher environments so that, for example, it will be able to continue to cooperate at greater extremes of heat and cold, will have improved snow/ice melt capabilities and will withstand a greater number of thermal cycles,” the company said.

SpaceX is also signaling the dish will target enterprise buyers, perhaps businesses or research labs. “Some HP terminals will be deployed in Occupational/Controlled Environments, especially for enterprise customers. In addition, many installations will be made in areas that are inaccessible to the public. However, some HP terminals will likely be deployed in General Population/Uncontrolled Environments as well,” SpaceX says in an attachment to its application.

The attachment adds that SpaceX plans on installing the ruggedized dishes at customer premises using only "qualified" personnel. The company’s application to the FCC requests approval to operate the new dishes across the US, including in Alaska, Hawaii, Puerto Rico, and the US Virgin Islands.

In advance of Valentine's Day, BJ’s Restaurant & Brewhouse is pleasing dessert lovers with the return of its red velvet Pizookie.

Those headed to BJ's for lunch can also check out the new lunch specials, which include four new options. Now diners can opt for enlightened spring harvest salad, enlightened Mediterranean chicken bowl, Italian chicken Parmesan and spaghetti and the Sauced 'N' Tossed chicken thighs lunch plate, served with fries and sautéed green beans.

The heat is on at Arby’s, which is offering what it's billing as the spiciest sandwich in the fast-food business.

Diablo Dare is offered in a smoked brisket and crispy chicken version, served with a free small vanilla shake to cool diners' palates.

“This is not a sandwich for the faint of heart,” Patrick Schwing, Arby’s chief marketing officer, said in a news release. “Everyone in QSR says they have a spicy option, but our research tells us that consumers are disappointed by fast food claims of spicy. We took that as a challenge by making sure all types of spicy, the hot, the numbing and the lingering, are combined to make the Diablo Dare a true test of how much heat you can handle.”

The Diablo Dare is available through Feb. 6 at participating locations for $5.99.

Daphne Oz on Launching Her Own Show as Her Dad Leaves Daytime TV - Variety

This week, Daphne Oz launched a new nationally-syndicated daytime show, “The Good Dish.”

The television host, writer and chef has been ready for this moment all her life — but when the opportunity came, Oz had to pull it off in record time.

Oz, who became a best-selling author as a college student with her first book “The Dorm Room Diet,” is known to audiences as a judge on “MasterChef Junior” and as one of the original hosts of ABC’s beloved foodie show, “The Chew,” which she departed one year before its final season. More recently, the mother of four has led a weekly cooking segment on her father’s daytime show, “The Dr. Oz Show,” called “The Dish.”

With the news that talkshow host and cardiothoracic surgeon would be pursuing a political career to run as a Republican for a Senate seat in Pennsylvania, his longtime show came to an abrupt end during its season. The timeslot was filled with “The Good Dish,” an expanded version of his daughter’s weekly cooking segment, which had already been airing on his show.

“We’ve been incubating this show for a number of years — and so, we had hoped,” Oz tells Variety in a phone interview, conducted moments after the first episode of “The Good Dish” was taped. Oz was giddy as she walked off set, and expressed gratitude to be able to get the show off the ground so quickly, which resulted in little-to-no holiday break for the crew and production staffers, many of whom came from “The Dr. Oz Show.” (Oz says the team found out in December that the show had been greenlit, roughly one month before its Jan. 17 premiere.)

“It did come together really fast and that’s a testament to the team behind it,” Oz says. “To be able to launch a show with people you genuinely know and love and have worked with for a number of years, it’s unheard of.”

Oz co-hosts the new talk and cooking show with Gail Simmons and Jamika Pessoa, who all starred in the weekly segment that had become popular among “Dr. Oz’s” viewers. “The Good Dish,” which airs five days per week in over 90% of the U.S., was picked up by station groups across the country including Fox, Hearst, Nexstar, Gray and Sinclair, among others.

Oz talked to Variety about “The Good Dish,” why daytime TV is still important in a digital world, why audiences still miss “The Chew,” plus her father leaving TV for politics…

Did you always envision “The Good Dish” as its own show?

That was definitely our hope, pending people liking it, which they really did. We had it on the air well before the pandemic and we were taking it out to sell it as its own show and then the pandemic hit, which obviously put breaks on lots of creative projects, but it’s been continually in discussion for various platforms.

It feels like after the pandemic, with people working remotely and cooking more in their own homes, there would be a heightened audience interest in this type of show.

Never before has there been such an explosion of interest in food and home improvement and lifestyle. You look at TikTok and it’s literally all tips and tricks. I think we’re so perfectly positioned to be able to help viewers wade through — what’s worth spending time on? What’s worth spending money on? What’s going to really materially improve your life?

You brought up TikTok. Nowadays, everyone has a platform and everyone is an “expert.” Why is daytime TV still important in this age of social media?

TV is unique, even with people making the most beautiful high-edit, fast pace content on TikTok and elsewhere. There is something familiar about TV. There is something intimate about TV. You see these people you’re going to see every day, like your family. We’re an hour-long, daily talk show that has breathing room that sometimes you can’t fit into a couple minutes.

Three women together on daytime TV isn’t very common. What makes you all unique hosts for this type of show?

The whole goal of “The Good Dish” is to be your best in the kitchen. Yes, we’re experts in food. Yes, we’ve worked in this business for a long time and know all the tips and tricks chefs have and everything else that we hope to bring to bear as experts, but what we’re really experts at is our real lives as moms, as women, as people just living busy lives.

What else will “The Good Dish” cover, besides food?

I think people’s appetite for cool cooking ideas has just exploded, so to be able to really be responsive to that excitement — not just around food, but this whole category of home improvement, beauty, fashion, lifestyle tips, family dynamics, anything that would help improve your life, uplift you, make you feel good, make you feel like you spent time with girlfriends and just enjoyed yourself, that is the hope for this show. I view “The Good Dish” as having everything that is delicious in daytime.

Drew Barrymore surprised you on the show, and you had Andy Cohen drinking tequila and cooking burgers on your second episode. What other celebrity guests will come on the show?

We’re having Tia Mowry, Brooke Shields, Michael Symon, Gordon Ramsay, Marie Osmond, Food God. There is a really fun chance within the show to peel back the curtain on celebrities at home — we’ll be able to see what Ayesha Curry has in her fridge. We did a lot of segments of “The Dish on Oz” from our own home kitchens [during the pandemic], and we heard from tons of people that it just felt good to see how chefs live in their own home spaces. So, we’re going to have celebrities come by and peek into their fridge, have them dish the details on their favorite lost child recipe that they want us to recreate.

You have deep experience in the daytime space with the cooking format from co-hosting “The Chew.” Do you think “The Good Dish” is a good replacement for people who miss that show?

It was a really special show. I hear from people every day who miss the show and miss the camaraderie — they felt like they were able to have lunch with us every day. It’s a food show, so I think there are tastes and elements of it that would definitely appeal to people who loved “The Chew,” but at the same time, I think “The Good Dish” is totally fresh. By virtue of the world we’re in now, 11 years after that show launched, we’re just dealing with a totally different platform.

Why do you think people miss “The Chew” so much? 

It was the first of its kind, really — a food-based talk show. I remember when we launched 11 years ago, everyone was up in arms because the slot we were taking had previously been occupied by “All My Children” and people were very sad to see it go away. Eventually, we were able to win over some of those viewers and become a part of the daytime landscape that people really looked forward to. It was just easy, informative and uplifting every single day. And that is very much the tone of “The Good Dish.”

You left “The Chew” the season before it was canceled, but do you think the show ended prematurely? Around that time, your former co-host Mario Batali was fired amid accusations of sexual harassment, and a lot of viewers wanted the show to keep going, even without him.

Unfortunately, I have no idea about the inner workings of networks and choices they make. It’s something that I’m sure they took into deep consideration because it was a show that was beloved by a lot of people. I’m sure they had their reasons, whatever they were. But I think it’s great to know that people still miss it because that just tells me that the hunger is still there for a show very much like “The Good Dish.”

Have you missed doing a daily TV show?

TV is one of my loves and I think of it so highly because it was the original way to meet people in their homes and to be invited to spend this time together. It is that meditative, coming-home, comfort food experience. When I think about what I hope this show becomes for people, it’s that TV that you turn to that lets you settle, lets you relax, lets you take a breath and lets you properly just enjoy time.

You’re taking over your dad’s time slot and you’ve been a fixture on his show for years. How do you feel about his show ending, after so many years?

He’s been on the air for so long and been able to do so much with his show, which is incredible. The people he’s been able to empower to feel like real experts in their health and really experts in their body. It’s crazy to think it was in Season 13. People forget this, but my dad didn’t go on “Oprah” for the first time until I was a sophomore in high school, so I grew up with my dad being a heart surgeon — a highly accomplished one. That was his profession. The TV thing hit pretty late in my life, in terms of him being on TV regularly and then every day with his own show. To be able to see him continue to explore and push boundaries, I love him so much and I’m excited for him.

You grew up with your dad is a doctor, then as a TV star, and now, he wants to tackle a new career path in politics. What are your thoughts about that?

Look, he’s my dad and I’ve known him always to be the hardest-working, most curious and so intelligent in everything that he does. I love him and I’m so proud of him. And honestly, I’m so grateful that he believed in “The Good Dish” so early on and gave us this opportunity to incubate the show on his show for the last couple years. Dr. Phil, Dr. Oz., they all incubated on “Oprah” — it’s such a great way to be able to test the water, see if audiences are interested, get feedback and start to cultivate that interest so that when a new show launches, people already know what’s happening. So, I’m incredibly grateful. He’s always been such a champion for all of us here, and he’s so excited for us to have a chance to stretch our wings now.

Depending what happens with the Senate race, do you think he would want to return to TV? Or is he done with that chapter in his life?

Oh, I don’t know. You’ll have to ask him! My dad doesn’t do anything half-assed. He’s a surgeon, [so] his training is do it right the first time, do it perfectly. And more than anything, be of service.

Dish of the Week: Roaming Rooster's honey butter chicken sandwich - GW Hatchet

Tucked inside a small vendor’s booth in Western Market lies Roaming Rooster, which just might offer the best chicken sandwich in D.C.

Situated inside 2000 Pennsylvania Ave., Roaming Rooster offers the food hall’s patrons a quick fix of tasty chicken sandwiches, chicken tenders and wings. While the restaurant may not have the fancy atmosphere or locale appropriate for your next date night, Roaming Rooster is a solid option for a quick lunch or dinner in Foggy Bottom that won’t disrupt your schedule.

Western Market offers a consistently clean and comfortable atmosphere to enjoy your meal alone or with some friends. Plenty of tables were available in the spacious hall when I stopped by for dinner, and during the warmer months the outdoor patio seating makes for a pleasant spot to grab a bite.

Roaming Rooster originally opened in 2015 as a food truck, which quickly expanded into a fleet of three and eventually brick and mortar stores like the one now in Foggy Bottom, according to their website.

Sandwiches fill the menu at Roaming Rooster, with options like the OG Nashville sandwich ($9.29) which is topped with coleslaw and pickles, The Buffalo ($9.49) with blue cheese and buffalo sauce and The Club ($9.99) with bacon, lettuce, tomato and ranch. Patrons can choose between four “heat levels” when ordering chicken, ranging from mild to extra hot. I ordered a mild honey butter chicken sandwich ($9.49) which comes smothered in honey butter along with a slice of cheddar cheese.

I also ordered fries ($3.99) and a bottle of Coke ($2.50) to round out the meal. Unfortunately, Roaming Rooster isn’t on GWorld like other restaurants inside Western Market, but the honey butter sandwich makes it worth the credit card swipe.

The server called my number after about five minutes, and I made my way over to the nearest table to eat. The sandwich, dripping with honey butter and wrapped in a soft bun, was larger than most chicken sandwiches I’ve eaten. The serving of fries was also more than plentiful, and they were delivered inside of a paper cup wrapped in a paper bag, similarly to Five Guys’ presentation.

The first bite of the sandwich nearly froze me like the food critic in Ratatouille when he tastes Remy’s dish – the chicken was perfectly crispy, the bun was warm and soft, the honey butter was delectably sweet but not overpowering and the flavor of the slightly-melted cheddar at the bottom of the sandwich perfectly complemented the buttery chicken. The physical aspects of the sandwich were impressive, too – it didn’t fall apart despite its size, and the bun never became soggy, even with the sandwich covered in a layer of melted butter.

I was born and raised in the South, so I’ve had my fair share of chicken sandwiches, but this one might just be the best I’ve ever had.

In spite of my glowing review of the sandwich, the french fries were at best forgettable and at worst simply bad. I suggest skipping out on the fries opting for the coleslaw as a side ($3.99).

Roaming Rooster doesn’t offer dessert, but nearby options like cannoli from Capo Deli and ice cream and cookies from Captain Cookie could satisfy your sweet tooth after your meal.

The next time you’re walking by Western Market and in need of a quick and tasty meal, stop by Roaming Rooster to give this finger-licking sandwich a try.

FORT COLLINS, Colo. – Fans like to focus on the starters, but in college basketball, that particular lineup isn't always the most pertinent one to gaze upon.
 
In a tight game, it's the five on the floor in the clutch who make the difference, and more often than not for Colorado State's men's basketball team, Chandler Jacobs is one of those Rams. His performance Wednesday night against New Mexico made the transfer crucial.
 
In an 80-74 Mountain West victory, Jacobs did a little of this, a tad of that and put big numbers in some key columns. Even some fans won't see, such as being a defensive disturbance against a Lobo squad which plays freewheeling on the offensive end.
 
"He just keeps coming on. I thought his presence defensively helped change the game for us, and 10 rebounds again, his ability to rebound the ball and defend," CSU head coach Niko Medved said. "He's getting more and more comfortable offensively, and he knocks down his free throws for us. His role just continues to grow and he's just playing better and better. I thought he was terrific at times here tonight."
 
He filled his stat line against the Lobos, producing the first double-double of his CSU career. He scored 12 points, two of them crucial free throws late in the game. He pulled down 10 rebounds, as that part of his game is really starting to live up to the declaration he made to David Roddy when first arriving on campus.
 
Jacobs told him he liked to rebound, and lately, he really has. His average sits at 3.9 per game, but in the past three contests, it has more than doubled to 8.7, grabbing nine against Utah State and seven on the road at San Jose State. And four of his rebounds case off the offensive glass, extending possessions.
 
But deep down, Roddy said his new teammate brings a bit of everything to the floor, especially an infusion of energy as he comes off the bench as part of a line change of four players, generally about five or six minutes into the opening half.
 
"A bunch of energy. He's an outgoing guy," said Roddy, who led the Rams with 21 and finished with six rebounds. "Off the court, he's an amazing human being, and on the court, he brings a lot of energy, as well. The first thing he told me was I love rebounding, so I was like, man, that's crazy to hear. I love it. He got his double-double tonight, which I'm super proud of him for. He's been talking about it for a while. It was going to happen in due time."
 
Jacobs produced a block at a key moment. A steal, too, and he really locked down defensively.
 
Better yet, he's really locked into his role. While he's made it appear seamless, it did require some adjustment on his part. One has to remember he was the star attraction at Dallas Baptist, scoring more than 20 points per game. He could dictate what shots he wanted and when.
 
"I think after being a starter for so long, coming off the bench again was a different adjustment, but it's one I've really, really loved, and I really enjoy my role, so I appreciate it," Jacobs said. "My prior years I wasn't super-efficient in terms of the opportunities I had to attack, because I had a plethora of them, so it was like I could take as many dribbles as I wanted, I could do whatever I wanted. But playing with better players and playing in a more structured offense I would say, there's a better shot available. At my old school, I made shots, but I also took tough shots. I think now it's just about taking the shot that's good for the team and not just for yourself."
 
What's made it work is his attitude. Roddy talked about the person he is, and so too does Medved. He's the furthest thing from selfish, and has been since he first arrived.
 
Medved knew he was adding a very athletic and long player to the lineup, one who could provide a spark in multiple ways. There was never any worry about him adjusting to his minutes, because of the type of person he is, which is rather introspective and team oriented.
 
"I think you're seeing that. He knew that was a possibility when he came here," Medved said. "He's just such a mature young man. He's dominating his role; he's trying to be a star in the role he has, and he's making a difference, and he knows that, he's feeling that. I think he's really thriving on that. I don't think he's really concerned at all about starting, he just really wants to have a role to help our team, and I think we're seeing it."
 
The really good players maximize the minutes they get, no matter when they come. It could be from the very tip, but it's even more crucial at the end when the game is in the balance. He may not start, but Jacobs is showing his new team is more that capable of finishing.
