Students reflect on joys of cake baking - Texarkana Gazette

TEXARKANA, Texas — Four students gathered Thursday night for their final exam in Basic Cake Decorating. They had a chance to demonstrate their newly acquired knowledge in the second floor kitchen of the Truman Arnold Center of Texarkana College.

"This is our Basic Cake Decorating course," said Valerie Pilgreen, the cake decorating instructor for Texarkana College. "We also offer an Advanced Cake Decorating course, and for those interested, we will offer that one again in the Fall. We like to offer it when we believe we have a crop of students ready to go to that level."

Pilgreen has been teaching these skills for about 15 years, starting out at Hobby Lobby, then making her way onto the Texarkana College staff. (She is also one of the two sewing teachers on the TC staff.).

"I love it," she said. "I love to teach cake decorating. Its fun. I love to see their creativity. The greatest compliment I get is when I see my students skills surpass mine."

Denise Nicklas and Carol Smith enrolled in the class together. Both of them are beginners in cake artistry and were looking forward to it.

"We though it would be fun," Nicklas said. "A chance to learn new things."

"This was a chance to meet new people," Smith said. "Also, doing this is easier than one might think, once you learn a few of the techniques."

Pam Davies is new to this, as well, and is drawn to the technical side of cake decorating.

"I love it, this is lots of fun," she said. "I've wanted to learn this for years. It is especially interesting, the way the ingredients and the chemistry comes together."

Donna Williams, who moonlights the evening classes after getting off her job at Cooper-Goodyear, is looking to build a new skill set after she retires from her day job.

"I love learning new things," she said. "Also, it is good to have options."

Basic Cake Decorating is also one of the options offered at Texarkana College's Kids College most years. They hope to offer it again next summer.
