Celebrate an old holiday favorite with a new dish - PostBulletin.com

The story, told through dance, follows a young girl named Clara (or in some versions, Marie), who receives a nutcracker doll as a gift at her family Christmas party. That night, Clara and her nutcracker doll go on a magical journey to “The Land of the Sweets,” where they see all kinds of “sweets” perform. Many consider it a “coming of age” story, as Clara is becoming an adult and meanwhile holding on to the joy and wonder of childhood.

This year looks different for many "Nutcracker" enthusiasts. In the absence of traditional live performances, perhaps a "Nutcracker"-inspired entrée could help honor the tradition in a new way. Consider trying the recipe below, or coming up with your own "Nutcracker" meal creations.

In this dish, pistachios serve as the “cracked nut” topping. They also offer a source of fiber, protein, copper, manganese, vitamin B6 and heart-healthy fats. You’ll notice the recipe calls for the pistachios to be “finely chopped.” I would recommend either purchasing the nuts already chopped or chopping them yourself in a food processor.

Contrary to its name, a nutcracker doll would not be an ideal utensil to prepare this dish.

The chicken is coated in honey mustard sauce and whole-wheat bread crumbs, cooked, then served over green beans and topped with a Greek yogurt-mustard sauce. This offers vegetables, whole grains and protein in a simple and balanced way.

While it doesn’t call for it, you might even explore the idea of “sugar plums” for dessert.

I hope this cracked-nut-topping chicken can bring a little inspiration to your table. And I hope that this season, you’re able to embrace and rekindle the childlike joy and wonder that Clara does in “The Nutcracker.”

Pistachio-Crusted Chicken with Green Beans

Serves 4

All you need:

½ cup shelled finely chopped pistachios

½ cup whole-wheat bread crumbs

¼ tsp black pepper

3 tablespoons honey mustard

4 boneless, skinless chicken breasts (1¼ pounds total)

½ pound fresh green beans

½ cup plain Greek yogurt

1 tablespoon yellow mustard

1/8 tsp cayenne pepper

All you do:

Preheat oven to 400 degrees. Line a baking pan with parchment paper; set aside.

In a shallow dish, combine pistachios, bread crumbs and black pepper.

Brush honey mustard onto both sides of chicken breasts. Coat chicken, one piece at a time, with pistachio mixture. Transfer to prepared baking pan. Bake for 25 to 30 minutes, or until chicken is cooked throughout to an internal temperature of at least 165 degrees.

Meanwhile, in a large saucepan, cook green beans in boiling water for 8 minutes or until crisp-tender. In a small saucepan, combine yogurt, yellow mustard and cayenne pepper. Cook over low heat until heated through.

Serve chicken with green beans topped with yogurt-mustard sauce. If desired, sprinkle additional black pepper on green beans.
