When Colby Conklin decided to open an Asian-fusion restaurant in Birmingham, there was one thing he wanted to be sure of: He had to find the same bao buns that famed chef David Chang of Momofuku uses at his restaurant. A trip to Mr. Chen’s/Hometown Supermarket proved fruitful, and Conklin was ready to debut his new restaurant’s perfect, pillowy bao buns.
EastWest, on Second Avenue North, has become a downtown staple for excellent food, crafted cocktails, and a trendy atmosphere. The restaurant’s menu features three Bao Bun options: soft shell crab, pork belly, and short rib. Each comes with different accompaniments stuffed into the steamed bun.
Soft shell crab is a fried crab topped with yum yum sauce, jalapeños, and onion slaw; smoked pork belly comes with house sauce, cucumbers, and scallions; and the tender short rib is finished with a ginger-scallion relish. Order one of each as a meal, or sample one as a snack ($5-6 each).
